Chicken and Cider Stew with Mashed Potatoes and Apples Recipe

I don’t know about you, but i cringe at the thought of making dinner at the end of a busy day. Fact is, we have to feed the family. I’m going to give you a great recipe for an easy dinner. And the best part is…. It will only take two pots. For me the clean up is always the worst part! You will not believe how amazing the house will smell while cooking up this yummy dish! My husband kept sneaking into the kitchen in excitement. He is really the chef of our home and he gives Chicken and cider stew with mashed potatoes and apples 2 thumbs up. Well, i asked him how many thumbs he gives it and he responded ” I only have 2″! LOL


INGREDIENTS

  • 2 lbs. Boneless chicken, trimmed and cut into 3/4-in cubes
  • 1 1/2 tablespoons finely chopped fresh thyme
  • 1 tablespoon vegetable oil
  • 1/3 cup butter
  • 3 shallots, thinly sliced
  • 1 1/2 cups apple cider
  • 2 lbs potatoes, cubed
  • 2 large green apples, peeled, cored, and sliced into 8 pieces
  • 2/3 cup cream

DIRECTIONS

To start, season the chicken with salt and pepper and 2 teaspoons of the thyme. Heat the oil and 1 tablespoon of the butter in a large saucepan over mediam heat. Brown the chicken in two batches for 2-3 minutes. Remove. Add the shallots and the remaining thyme to the saucepan and saute for 2 minutes. Pour in the cider, then bring to a boil, scraping off any sediment from the bottom. Return the chicken to the saucepan and cover. Reduce the heat to medium-low and cook for 35-40 minutes or until the chicken is tender and the sauce has reduced (check occasionally to see if any water needs to be added).

Meanwhile, cook the potatoes and apples in a large pot of boiling water for 15-20 minutes or until tender. Drain and return to the pot over low heat to allow any water to evaporate.

Remove from the heat and mash with a potato masher. Stir in 2 tablespoons of the cream and remaining butter with a wooden spoon, then season well.

Stir the remaining cream into the stew and cook for another 2-4 minutes or until the sauce has thickened. Serve at once with the mash potatoes and apples with a crisp salad or vegetable of you’re choice.
